Hi! My name is Crystal and I am the voice and creator of Happy Cow and Me.
I am so happy you are here!
It’s my passion to share delicious, easy-to make, vegan recipes. The recipes I share are a reflection of the way that I eat, a healthy plant-based diet with occasional treats.
Food is life! And I’m here to show that you sacrifice nothing when you chose a vegan diet. In fact, you gain so much: health, vitality, a slimmer body, and a wonderful sense of peace that comes with choosing a plant-based diet.
So let’s take a moment to meet the cow (my inspiration for starting this blog). The cow gives and gives and gives, barely taking except for grass and hay. That’s right…these gentle giants don’t eat meat. Cows are also intelligent, social animals, with a particularly strong mother/calf bond. I have a huge soft spot in my heart for these beautiful animals…there is just something so sweet about them.
I think it’s about time we give the cows a break (factory farming is so cruel). Happy Cow = Happy Us.
HappyCowandMe wouldn’t be the same without the help of my team: my husband Jonathan (photographer and helper of all that is tech), and our three children Ava, Sophie, and Reeves (the toughest food critics, they help keep my recipes on point!). Life is so full of possibilities! As a former second grade teacher turned television sales executive, I’m not quite sure of the exact moment that I decided to start HappyCowandMe, although here I am and loving every minute of it.
I’ve always had a passion for anything dealing with food. Cooking, dining, nutrition, collecting cookbooks and binge watching cooking shows are things I’ve done my whole life. Although, if you would have asked me a few years ago about food blogging, I wouldn’t have known the first thing about it. I believe what gave me the push to start Happy Cow and Me was my overwhelming desire to share the vegan recipes that I create. I wasn’t always vegan…
Giving up Meat and Dairy
I decided to give up meat and dairy a few years ago after watching the Disney movie Ferdinand with my then, 8 year old daughter, Sophie. Sophie has a very kind and gentle heart and she had some questions about the movie. For example, where is Ferdinand’s mom (Ferdinand is a bull), and where do they take the bulls when the cows give milk? As a result, these questions led to more questions, questions about factory farming and the dairy industry- questions I couldn’t answer. Later that night, I did some research on the subject and what I found forever changed me. The very next morning I decided to give up meat and dairy and I haven’t looked back.
What’s that smell?
Although giving up dairy was an ethical decision, it didn’t come without perks- like breathing through both nostrils! I didn’t even realize that I wasn’t breathing properly all the time. Then, one day I realized my sense of smell was better, and as a result my husband Jonathan decided to give up dairy in hopes that it would help his chronic sinus and allergy problems. To our surprise, his problems improved dramatically, to the point where there was no denying it wasn’t just coincidence.
Happy Cow = Happy Me and You
It was around this time when I was determined to cook just as well, no wait a minute, even better without meat and dairy. A spark had been ignited and I was on fire, like a mad woman in the kitchen! I had found a true passion, a passion that led me to create Happy Cow and Me. Happy Cow and Me is about so much more than just sharing my recipes. It’s about coming together and making a difference in the world. Happy cow = Happy me and you!
